Roasted Potatoes

Ingredients:

  • 2 pounds (about 1 kg) of potatoes (Yukon Gold or Russet potatoes work well)
  • 2-3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh herbs (optional, such as rosemary or thyme)

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 425°F (220°C).
  1. Prepare the Potatoes:
  • Wash and scrub the potatoes. You can peel them if you prefer, but leaving the skins on adds a nice texture.
  • Cut the potatoes into bite-sized cubes, ensuring they are roughly the same size for even cooking.
  1. Season the Potatoes:
  • In a large bowl, toss the potato cubes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Make sure the potatoes are evenly coated with the seasonings.
  1. Spread on Baking Sheet:
  • Spread the seasoned potatoes in a single layer on a baking sheet. Use parchment paper for easy cleanup.
  1. Roast in the Oven:
  • Roast the potatoes in the preheated oven for 30-40 minutes or until they are golden brown and crispy on the outside. Stir the potatoes halfway through the cooking time for even browning.
  1. Add Fresh Herbs (Optional):
  • If desired, toss the roasted potatoes with fresh herbs like rosemary or thyme just before serving for added flavor.
  1. Serve:
  • Transfer the roasted potatoes to a serving dish and serve hot.
  1. Enjoy:
  • Enjoy the crispy, flavorful roasted potatoes as a side dish with your favorite main courses.

Tips:

  • Experiment with different seasonings to suit your taste. You can add herbs, cayenne pepper, or grated Parmesan for variation.
