Ingredients:

  • 2 acorn squash
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper, to taste
  • Optional: a pinch of cayenne pepper for a hint of heat
  • Fresh herbs, such as chopped parsley or thyme, for garnish (optional)

Directions:

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  1. Prepare the Squash:
  • Wash the acorn squash and cut them in half horizontally. Scoop out the seeds and pulp using a spoon.
  1. Slice into Wedges:
  • Slice each acorn squash half into 1-inch thick wedges.
  1. Season the Squash:
  • In a bowl, mix together olive oil, maple syrup, ground cinnamon, ground nutmeg, salt, pepper, and cayenne pepper if using.
  1. Coat the Squash:
  • Brush or toss the acorn squash wedges with the prepared seasoning mixture, ensuring each wedge is coated evenly.
  1. Arrange on Baking Sheet:
  • Place the seasoned acorn squash wedges in a single layer on a baking sheet lined with parchment paper.
  1. Roast in the Oven:
  • Roast in the preheated oven for 25-30 minutes or until the squash is tender and caramelized, flipping the wedges halfway through for even cooking.
  1. Garnish and Serve:
  • Remove the roasted acorn squash from the oven. Garnish with fresh herbs if desired.
  1. Enjoy:
  • Serve the roasted acorn squash as a delicious and flavorful side dish.

Tips:

  • You can experiment with the seasoning to suit your taste. Some people enjoy adding a touch of brown sugar or honey for extra sweetness.
  • Make sure to check the squash for doneness by inserting a fork or knife; it should go through easily when the squash is cooked.
  • Roasting times may vary, so keep an eye on the squash to prevent overcooking.

Roasted acorn squash makes for a visually appealing and tasty addition to your dinner table. Feel free to adjust the recipe to fit your preferences!
