Velveeta Broccoli Rice Casserole

Here’s a creamy, cheesy Southern comfort classic — Velveeta Broccoli Rice Casserole! Perfect for holidays, potlucks, or a weeknight side dish, it’s loaded with gooey cheese, tender broccoli, and fluffy rice. 🧀🥦🍚

📝 Ingredients:

  • 2 cups cooked white rice
  • 1 (10 oz) package frozen chopped broccoli, thawed and drained
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
  • 8 oz Velveeta cheese, cubed
  • ¼ cup milk
  • Salt & pepper, to taste
  • Optional: ½ tsp garlic powder or onion powder
  • Optional topping: crushed crackers or shredded cheddar cheese

🔥 Directions:

  1. Preheat Oven:
    Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Melt Cheese Mix:
    In a saucepan over low heat, combine Velveeta and milk. Stir until melted and smooth. Add cream of mushroom soup and mix well.
  3. Combine Everything:
    In a large bowl, combine cooked rice, broccoli, and cheese mixture. Season with salt, pepper, and optional spices.
  4. Bake:
    Pour into the prepared baking dish. If using a topping, sprinkle on now. Bake for 25–30 minutes, or until bubbly and heated through.
  5. Serve:
    Let sit for 5 minutes before serving. Enjoy warm!

  • Swap white rice for brown or wild rice for a wholesome twist.
