Here’s a sweet, tangy, and tender Sweet Hawaiian Crockpot Chicken recipe — made with juicy chicken, pineapple, and a sticky-sweet sauce that’s full of island-inspired flavor. Just toss it in the slow cooker and let it do all the work!

🍍 Sweet Hawaiian Crockpot Chicken

Prep Time: 10 minutes
Cook Time: 4–6 hours (on LOW)
Total Time: ~6 hours
Servings: 4–6

📝 Ingredients:

  • 2 lbs boneless, skinless chicken breasts (or thighs), cut into chunks
  • 1 cup pineapple juice
  • ½ cup brown sugar
  • ½ cup soy sauce (low-sodium recommended)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening, optional)
  • Optional: chopped green onions or sesame seeds for garnish

👩‍🍳 Instructions:

  1. Add chicken to your slow cooker.
  2. In a small bowl, whisk together pineapple juice, brown sugar, soy sauce, and garlic. Pour over the chicken.
  3. Add the pineapple chunks on top.
  4. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until chicken is tender and cooked through.
  5. Optional: If you’d like a thicker sauce, remove ½ cup of the cooking liquid, stir in cornstarch slurry, and return it to the slow cooker. Cook on HIGH for another 15–20 minutes until thickened.
  6. Serve over rice, noodles, or veggies. Garnish with green onions or sesame seeds if desired.

✅ Tips:

  • Use chicken thighs for even more tenderness and flavor.
  • Add bell peppers or onions for a sweet-and-savory veggie boost.
  • Great for meal prep — leftovers reheat beautifully!

🧊 Storage:

  • Store in an airtight container in the fridge for up to 4 days.
  • Freeze in portions for up to 2 months.
