Why This Recipe Works

This Sticky Crispy Chicken Burger combines juicy, crispy-fried chicken with a sticky, sweet, and slightly spicy glaze. Paired with fresh toppings and a soft bun, it’s a deliciously satisfying meal that balances crunch, heat, and sweetness in every bite!

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken thighs (or breasts, pounded to even thickness)
  • 1 cup buttermilk (for marinating)
  • 1 cup flour
  • 1/2 cup cornstarch
  • Salt and pepper to taste
  • 1/2 tsp smoked paprika
  • Oil for frying

For the Sticky Sauce:

  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp brown sugar
  • 2 tbsp ketchup
  • 1 tbsp sriracha (adjust to taste)
  • 1 clove garlic, minced
  • 1 tsp grated ginger

For the Burger:

  • 2 burger buns
  • Lettuce leaves
  • Sliced pickles
  • Sliced tomato
  • Mayonnaise or any preferred sauce

Directions

  1. Marinate the Chicken:
    • Place chicken thighs in a bowl and pour buttermilk over them. Cover and let marinate for at least 30 minutes or overnight for best results.
  2. Prepare the Breading:
    • In a shallow dish, mix the flour, cornstarch, salt, pepper, and smoked paprika.
  3. Coat and Fry the Chicken:
    • Heat oil in a skillet to 350°F (175°C).
    • Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, pressing firmly for a thick coating.
    • Fry each piece for 5-6 minutes on each side until golden brown and crispy. Transfer to a wire rack to drain.
  4. Make the Sticky Sauce:
    • In a small saucepan, combine soy sauce, honey, brown sugar, ketchup, sriracha, garlic, and ginger. Simmer over medium heat, stirring until the sauce thickens and becomes sticky, about 5 minutes.
  5. Glaze the Chicken:
    • Dip each fried chicken piece in the sticky sauce, coating evenly.
  6. Assemble the Burger:
    • Spread mayonnaise on the buns. Place lettuce and sliced tomato on the bottom half of each bun, followed by the sticky crispy chicken, pickles, and the top bun.
  7. Serve:
    • Serve immediately with extra sauce on the side if desired.

Note

  • Spice Level: Adjust the sriracha in the sauce to make it spicier or milder.
  • Crispier Chicken: Add a little cornstarch to the flour mixture for extra crispiness.
  • Alternative Toppings: Try coleslaw or a slice of cheese for extra flavor.
