Ingredients
For the Chicken:
- 2 boneless, skinless chicken thighs (or breasts, pounded to even thickness)
- 1 cup buttermilk (for marinating)
- 1 cup flour
- 1/2 cup cornstarch
- Salt and pepper to taste
- 1/2 tsp smoked paprika
- Oil for frying
For the Sticky Sauce:
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tbsp brown sugar
- 2 tbsp ketchup
- 1 tbsp sriracha (adjust to taste)
- 1 clove garlic, minced
- 1 tsp grated ginger
For the Burger:
- 2 burger buns
- Lettuce leaves
- Sliced pickles
- Sliced tomato
- Mayonnaise or any preferred sauce
Directions
- Marinate the Chicken:
- Place chicken thighs in a bowl and pour buttermilk over them. Cover and let marinate for at least 30 minutes or overnight for best results.
- Prepare the Breading:
- In a shallow dish, mix the flour, cornstarch, salt, pepper, and smoked paprika.
- Coat and Fry the Chicken:
- Heat oil in a skillet to 350°F (175°C).
- Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture, pressing firmly for a thick coating.
- Fry each piece for 5-6 minutes on each side until golden brown and crispy. Transfer to a wire rack to drain.
- Make the Sticky Sauce:
- In a small saucepan, combine soy sauce, honey, brown sugar, ketchup, sriracha, garlic, and ginger. Simmer over medium heat, stirring until the sauce thickens and becomes sticky, about 5 minutes.
- Glaze the Chicken:
- Dip each fried chicken piece in the sticky sauce, coating evenly.
- Assemble the Burger:
- Spread mayonnaise on the buns. Place lettuce and sliced tomato on the bottom half of each bun, followed by the sticky crispy chicken, pickles, and the top bun.
- Serve:
- Serve immediately with extra sauce on the side if desired.
Note
- Spice Level: Adjust the sriracha in the sauce to make it spicier or milder.
- Crispier Chicken: Add a little cornstarch to the flour mixture for extra crispiness.
- Alternative Toppings: Try coleslaw or a slice of cheese for extra flavor.
