- Salt and black pepper, to taste
- 1 tsp sugar
- 2 bay leaves
- 1/2 cup milk
- Grated Parmesan cheese, for serving
Instructions:
- Cook pancetta or bacon in a large skillet over medium heat until crispy. Remove and set aside, keeping the rendered fat in the skillet.
- Add ground meat to the skillet, cooking until browned. Remove excess fat.
- Add ‘nduja sausage to the skillet, cooking until it melts into the meat mixture.
- Cook spaghetti or pasta according to package instructions, then drain and set aside.
- Heat oil and butter in the same skillet over medium heat. Add onion, garlic, carrot, and celery, cooking until softened.
- Pour in red wine, reducing by half.
- Stir in tomato paste, puréed tomatoes, salt, black pepper, sugar, and bay leaves. Simmer for 15-20 minutes until thickened.
- Stir in milk and cooked pancetta or bacon, cooking for an additional 5 minutes.
- Remove bay leaves from the sauce and discard.
- Serve spicy sausage spaghetti Bolognese over cooked pasta, garnished with grated Parmesan cheese.
Red Wine Substitutes:
