Spicy Kale and Avocado Salad

Ingredients:

  • 1 bunch of kale, stems removed and leaves chopped
  • 1 ripe avocado, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup pumpkin seeds or sunflower seeds (optional, for added crunch)

For the dressing:

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste

Instructions:

  1. In a large salad bowl, combine the chopped kale, diced avocado, cherry tomatoes, red onion, and feta cheese (if using).
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, red pepper flakes, salt, and pepper. Adjust the seasonings to taste.
  3. Pour the dressing over the kale and avocado mixture. Toss the salad well to ensure all ingredients are coated evenly.
  4. Allow the salad to sit for a few minutes before serving to let the flavors meld together. This also helps to soften the kale slightly.
  5. Just before serving, sprinkle pumpkin seeds or sunflower seeds on top for added crunch.
  6. Serve the spicy kale and avocado salad as a refreshing and nutritious side dish or add grilled chicken or shrimp for a complete meal.
