Here’s a simple and flavorful recipe for Smoked Pork Chops — tender, juicy, and packed with smoky goodness. Perfect for grilling, smoking, or even baking!

Smoked Pork Chops Recipe

Prep Time: 10 minutes
Cook Time: 1–1½ hours (depending on thickness & method)
Total Time: ~1½ hours
Servings: 4

📝 Ingredients:

  • 4 bone-in pork chops (about 1 inch thick, or pre-smoked)
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Optional: dash of cayenne or chili powder for a kick

🔥 Smoking Instructions (Low & Slow Method):

  1. Preheat your smoker to 225°F (107°C).
  2. Pat dry pork chops and rub with olive oil. Mix spices and coat both sides evenly.
  3. Place chops on the smoker grate and cook for 60–90 minutes, or until internal temp reaches 145°F (63°C).
  4. Optional: Sear quickly on a hot grill or skillet to crisp up the outside before serving.

🍽 Oven-Baked Version (for Pre-Smoked Chops):

  1. Preheat oven to 350°F (175°C).
  2. Place pre-smoked pork chops in a baking dish with a splash of broth or water. Cover with foil.
  3. Bake for 20–25 minutes, until heated through. Uncover and broil for 2–3 minutes if desired.

✅ Tips:

  • Use applewood or hickory chips for the best smoky flavor.
  • Let chops rest 5 minutes before slicing.
  • Serve with mashed potatoes, roasted veggies, or a tangy slaw.

🟡 Do Smoked Pork Chops Need to Be Cooked?

  • Fully pre-smoked (precooked) pork chops from the store only need to be reheated — bake, grill, or pan-sear until warm (internal temp 145°F).
  • Raw smoked pork chops (if you’re doing the smoking yourself) must be cooked thoroughly to an internal temperature of 145°F (63°C).

🔥 How to Smoke Pork Chops on a Charcoal Grill:

  1. Set up a two-zone fire (hot coals on one side, no coals on the other).
  2. Add wood chunks or soaked wood chips (applewood or hickory work great) to the hot coals.
  3. Rub pork chops with oil and your favorite dry rub.
  4. Place pork chops on the cooler side of the grill (indirect heat).
  5. Cover the grill and maintain a temp of 225°F–250°F.
  6. Smoke until the internal temperature of the chops hits 145°F, then rest for 5 minutes before serving.

⏱ How Long to Smoke Pork Chops?

  • At 225°F–250°F, it typically takes 60–90 minutes depending on thickness.
  • 1-inch thick chops: ~60 minutes
  • Thicker chops (1½ inches+): ~75–90 minutes

Use a meat thermometer for accuracy!
