This Roasted Jalapeño Popper Grilled Cheese takes the classic flavors of jalapeño poppers—spicy roasted jalapeños, creamy cheese, and crispy breadcrumbs—and brings them together in a melty, golden grilled cheese sandwich. It’s spicy, creamy, and satisfyingly crunchy, perfect for adding a kick to your lunch or dinner!
Ingredients
- 2-3 fresh jalapeños
- 4 slices of bread (sourdough, white, or your favorite sandwich bread)
- 2 tbsp butter, softened
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp panko breadcrumbs (optional, for added crunch)
- 1 tsp olive oil
Directions
- Roast the Jalapeños:
- Preheat your oven or toaster oven to 400°F (200°C).
- Place the jalapeños on a baking sheet, drizzle with olive oil, and roast for 10-12 minutes, turning halfway through, until the skin is blistered and slightly charred.
- Remove from the oven, let cool slightly, then slice and remove seeds (or leave some seeds for extra heat).
- Prepare the Filling:
- In a medium bowl, mix the softened cream cheese, shredded cheddar, and shredded mozzarella until combined.
- Assemble the Sandwich:
- Butter one side of each bread slice.
- Place two slices, butter-side down, on a clean surface.
- Spread half of the cheese mixture on each slice.
- Layer the roasted jalapeño slices over the cheese mixture and sprinkle with panko breadcrumbs if using (this adds a little crunch similar to traditional jalapeño poppers).
- Top with the remaining cheese mixture and place the other slices of bread on top, butter-side up.
- Grill the Sandwiches:
- Heat a skillet over medium heat. Add the sandwiches and cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
- Serve:
- Remove from the skillet, slice, and serve warm.
