- 2 boneless, skinless chicken breasts (cut into strips)
- 1/2 lb shrimp (peeled and deveined)
- 1 lb fettuccine pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese (optional)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley (for garnish)
🔥 Directions:
- Cook Pasta: Cook fettuccine according to package directions. Drain, reserving some pasta water.
- Cook Chicken & Shrimp:
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season chicken strips with salt and pepper and cook until golden and cooked through, about 5-7 minutes. Remove from skillet. In the same skillet, add another tablespoon of olive oil and cook shrimp until pink and cooked through, about 2-3 minutes per side. - Make Carbonara Sauce:
In the same skillet, lower the heat to medium and sauté minced garlic until fragrant (about 30 seconds). Add heavy cream and bring to a simmer. Stir in Parmesan cheese and mozzarella (if using), and cook until the sauce thickens slightly, about 3 minutes. Season with red pepper flakes, salt, and pepper. - Combine: Add the cooked pasta, chicken, and shrimp to the sauce. Toss everything to coat well, adding reserved pasta water if needed to loosen the sauce.
- Serve: Garnish with fresh parsley and more Parmesan if desired. Serve hot.
