Nutella Oatmeal Raisin Cookies

Ingredients:

  • 1 cup Nutella
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raisins

Instructions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together Nutella, butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well incorporated.
  6. Fold in raisins until evenly distributed throughout the dough.
  7. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Expert Tips:

  • Don’t overmix the dough to keep the cookies tender.
  • You can substitute other add-ins for raisins, such as chocolate chips or chopped nuts, if desired.
  • For a deeper Nutella flavor, you can add a tablespoon of cocoa powder to the dough.

How to Store:

  • Store the cookies in an airtight container at room temperature for up to 5 days.
  • To keep them fresh for longer, you can freeze the baked cookies in a single layer on a baking sheet, then transfer them to a freezer bag once frozen. They can be stored in the freezer for up to 3 months. To thaw, simply leave them at room temperature for a few hours or overnight.
