MEXICAN POTATOES

Here’s a flavorful and easy recipe for Mexican Potatoes — crispy on the outside, tender inside, and perfectly seasoned with bold spices. They’re great as a side dish, taco filler, or party appetizer!


🥔 Mexican Potatoes

Prep Time: 10 minutes
Cook Time: 30–35 minutes
Total Time: ~45 minutes
Servings: 4–6


📝 Ingredients:

  • 2 lbs Yukon gold or red potatoes, diced (skin on)
  • 2 tablespoons olive oil
  • 1½ teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • Optional: pinch of cayenne pepper for heat
  • Fresh cilantro, lime wedges, or cotija cheese for garnish

👩‍🍳 Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, toss the diced potatoes with olive oil and all the spices until evenly coated.
  3. Spread potatoes in a single layer on the prepared baking sheet.
  4. Roast for 30–35 minutes, flipping halfway through, until golden brown and crispy.
  5. Garnish with fresh cilantro, a squeeze of lime, or sprinkle with cotija cheese if desired.

✅ Tips:

  • Cut potatoes evenly for uniform roasting.
  • Air fryer option: Cook at 400°F for 20–25 minutes, shaking halfway through.
  • Add sautéed onions or bell peppers for extra flavor.
