Mango and Kale Salad

Ingredients:

For the Salad:

  1. 4 cups kale, stems removed and leaves chopped
  2. 1 ripe mango, peeled, pitted, and diced
  3. 1/2 red onion, thinly sliced
  4. 1/4 cup chopped fresh cilantro
  5. 1/4 cup chopped fresh mint

For the Dressing:

  1. 3 tablespoons extra-virgin olive oil
  2. 2 tablespoons fresh lime juice
  3. 1 tablespoon honey or maple syrup (adjust sweetness to taste)
  4. 1 teaspoon Dijon mustard
  5. Salt and pepper to taste

Optional Additions:

  1. 1/4 cup crumbled feta or goat cheese
  2. 1/4 cup chopped nuts (such as almonds or walnuts)
  3. 1/4 cup dried cranberries or raisins

Instructions:

  1. Prepare the Ingredients:
    • Wash the kale leaves thoroughly and remove the stems. Chop the leaves into bite-sized pieces.
    • Peel, pit, and dice the ripe mango.
    • Thinly slice the red onion.
    • Chop fresh cilantro and mint.
  2. Make the Dressing:
    • In a small bowl or jar, whisk together the extra-virgin olive oil, fresh lime juice, honey or maple syrup, Dijon mustard, salt, and pepper. Adjust the sweetness and seasoning to your taste.
  3. Assemble the Salad:
    • In a large bowl, combine the chopped kale, diced mango, sliced red onion, chopped cilantro, and mint.
  4. Add the Dressing:
    • Pour the prepared dressing over the salad ingredients.
  5. Toss and Marinate:
    • Toss the salad thoroughly to ensure all ingredients are well coated with the dressing.
    • Let the salad sit for a few minutes to allow the flavors to meld. For a more enhanced flavor, refrigerate the salad for about 15-30 minutes.
  6. Optional Additions:
    • If using optional additions like crumbled feta or goat cheese, chopped nuts, or dried cranberries, sprinkle them over the top of the salad just before serving.
  7. Serve:
    • Toss the salad again before serving.
    • Adjust seasoning if necessary.
  8. Enjoy:

Notes
