- 2 cups granulated sugar
- ½ cup brown sugar, packed
- ½ cup unsweetened cocoa powder
- 1 cup whole milk
- ½ cup (1 stick) unsalted butter

- Prep pan:
Line an 8×8-inch pan with parchment paper or foil. Lightly butter it. - Mix & heat:
In a heavy saucepan, combine granulated sugar, brown sugar, cocoa powder, and milk. Stir until smooth. - Cook:
Bring mixture to a boil over medium heat. Attach a candy thermometer and cook, stirring occasionally, until it reaches 234°F (soft ball stage) — about 10–15 minutes. - Add butter & vanilla:
Remove from heat. Add butter, vanilla, and a pinch of salt. Do not stir yet. - Cool & beat:
Let cool for 5–10 minutes, then beat with a wooden spoon until thick, glossy, and fudgey — about 5–8 minutes. - Pour & set:
Pour into prepared pan and smooth the top. Let cool at room temperature until firm — at least 2 hours. - Cut & enjoy!
