Kale Caesar Salad

Ingredients:

  • 1 bunch of fresh kale, stems removed and leaves chopped
  • 1 cup croutons
  • 1/2 cup grated Parmesan cheese
  • Caesar dressing (store-bought or homemade)
  • Salt and pepper to taste
  • Optional: Grilled chicken or shrimp for added protein

Caesar Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon anchovy paste (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions:

1. Prepare the Caesar Dressing:
a. In a bowl, whisk together mayonnaise, grated Parmesan cheese, Dijon mustard, minced garlic, anchovy paste (if using), Worcestershire sauce, and lemon juice.
b. Slowly drizzle in the olive oil while continuously whisking until the dressing is well combined.
c. Season with salt and pepper to taste. Adjust the ingredients according to your preferences.

2. Massage the Kale:
a. Place the chopped kale in a large bowl.
b. Drizzle a little olive oil over the kale and sprinkle with a pinch of salt.
c. Massage the kale with your hands for a few minutes until it becomes tender and dark green.

3. Assemble the Salad:
a. Add croutons and grated Parmesan cheese to the massaged kale.
b. Pour the Caesar dressing over the salad, starting with a small amount and adding more as needed.
c. Toss the salad until the kale is well coated with the dressing and the other ingredients are evenly distributed.

4. Optional: Add Protein:
If you want to make it a more substantial meal, you can add grilled chicken or shrimp on top of the salad.

5. Serve:
Plate the salad and serve immediately. Optionally, you can sprinkle additional Parmesan cheese or black pepper on top.

  • Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined.
  • Season with salt and pepper to taste. Adjust the ingredients based on your preference.

  • Massage the kale with your hands for a few minutes until it becomes tender and takes on a darker green color.
  • Add croutons and grated Parmesan cheese to the massaged kale.

  • Toss the salad until the kale is well coated with the dressing, and the other ingredients are evenly distributed.
  • Optional: Add Protein:
  • If desired, top the salad with grilled chicken or shrimp for added protein.
  • Plate the salad and serve immediately.
  • Optionally, sprinkle additional Parmesan cheese or black pepper on top.

Notes

  • Anchovy Paste: The use of anchovy paste is optional, but it adds a traditional Caesar salad flavor. If you’re not a fan of anchovies, you can omit this ingredient.
