Kale and Quinoa Salad

Ingredients:

  • 1 cup quinoa, rinsed and cooked according to package instructions
  • 4 cups kale, stems removed and finely chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional add-ins: cherry tomatoes, cucumber, red onion, feta cheese, avocado, or nuts

Instructions:

  1. Cook Quinoa: Rinse the quinoa under cold water, then cook according to the package instructions. Let it cool.
  2. Prepare Kale: Remove the stems from the kale leaves and finely chop them.
  3. Make Dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Massage Kale: Place the chopped kale in a large bowl, pour half of the dressing over it, and massage the kale with your hands for a few minutes until it starts to soften.
  5. Assemble Salad: Add the cooked quinoa to the kale, along with any optional add-ins you prefer.
  6. Dress Salad: Pour the remaining dressing over the salad and toss everything together until well combined.
  7. Serve: Transfer the salad to a serving dish and garnish with additional toppings if desired.
