- 2 cups raw cashews (unsalted)
- 2 tablespoons honey
- 1 tablespoon unsalted butter
- 1 tablespoon water
- ¼ teaspoon vanilla extract (optional)
- ¼ teaspoon salt
- 2 tablespoons sugar (for coating)

- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a small saucepan over medium heat, combine honey, butter, and water. Stir until melted and smooth. Remove from heat and stir in vanilla if using.
- In a bowl, pour the honey mixture over the cashews and mix until evenly coated.
- Spread cashews in a single layer on the prepared baking sheet.
- Bake for 15–18 minutes, stirring once halfway, until golden and fragrant. Watch carefully — they can burn quickly near the end.
