Greek Salad with Quinoa

Ingredients:

  • 2 cans of chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, Kalamata olives, and crumbled feta cheese.
  2. Gently toss the ingredients together until well combined.
  3. In a separate small bowl, whisk together the ultra-simple Greek salad dressing (see below).
  4. Drizzle the dressing over the salad and toss again to ensure even coating.
  5. Garnish the salad with fresh chopped parsley.
  6. Serve immediately or refrigerate until ready to enjoy.

Ingredients

  • 2 cups water
    2 cups whole milk
    4 black tea bags
    4 green cardamom pods, lightly crushed
    1 cinnamon stick
    1-inch fresh ginger, sliced
    4 tablespoons sugar (adjust to taste)
    Optional: honey or sweetener of choice
    Optional: a pinch of black pepper for a spicy kick

Directions

  • In a saucepan, bring the water to a boil.
  • Add the tea bags, crushed cardamom pods, cinnamon stick, and sliced ginger to the boiling water.
  • Reduce heat to low and simmer for 5-7 minutes to allow the spices to infuse into the water.
  • Pour in the milk and sugar, stirring gently to combine.
  • Allow the chai to simmer for an additional 5-7 minutes, ensuring it doesn’t come to a boil.
  • Taste the chai and adjust sweetness according to your preference, adding honey or sweetener if desired.
  • For an extra kick, consider adding a pinch of black pepper.
  • Remove the chai from heat and strain it to remove tea leaves and spices.

  • Pour the aromatic chai into cups or mugs.
