FRENCH COCONUT PIE

Here’s a sweet, old-fashioned dessert that’s rich, gooey, and full of coconut flavor — French Coconut Pie! 🥥🥧 It’s ridiculously easy to make with just a handful of pantry staples, and bakes into a golden, custard-like treat with a crisp top and chewy coconut center.

📝 Ingredients:

  • 1½ cups granulated sugar
  • 1 cup sweetened shredded coconut
  • 3 large eggs
  • 1 tbsp all-purpose flour
  • ½ cup (1 stick) unsalted butter, melted
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1 unbaked 9-inch pie shell

🔥 Directions:

  1. Preheat Oven:
    Set oven to 350°F (175°C).
  2. Mix Filling:
    In a medium bowl, whisk together sugar, eggs, flour, and vinegar. Stir in melted butter, vanilla, and coconut until combined.
  3. Fill Pie Shell:
    Pour the mixture into the unbaked pie crust, spreading it evenly.
  4. Bake:
    Bake for 45–50 minutes, or until the top is golden and set (a slight jiggle in the center is okay).
  5. Cool & Serve:
    Let the pie cool completely before slicing. Tastes great at room temp or chilled!

  • Don’t skip the vinegar! It balances the sweetness and adds depth.
  • Add a pinch of salt to enhance flavor.
  • Try with a splash of lemon juice or orange zest for a citrus twist.

❄️ Storage:

  • Refrigerate: Store covered for up to 4–5 days.
  • Freeze: Wrap slices in plastic wrap and freeze for up to 2 months. Thaw in the fridge.
