Here’s a hearty and comforting Farmer’s Casserole Recipe — packed with potatoes, cheese, eggs, and veggies, it’s the perfect make-ahead breakfast or brunch dish for busy mornings or lazy weekends! 🥔🧀🥚

📝 Ingredients

  • 3 cups frozen hash brown potatoes, thawed
  • ¾ cup shredded cheddar cheese (or Monterey Jack)
  • ¾ cup cooked ham, diced (or breakfast sausage/bacon)
  • ¼ cup chopped green onions
  • 1 (12 oz) can evaporated milk
  • 4 large eggs
  • ¼ tsp black pepper
  • ¼ tsp salt
  • Optional: diced bell peppers or spinach for extra veggies

🔥 Directions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Layer the hash browns evenly on the bottom of the dish. Top with cheese, ham, and green onions.
  3. In a bowl, whisk together evaporated milk, eggs, salt, and pepper. Pour over the layered ingredients.
  4. Bake uncovered for 50–55 minutes, or until a knife inserted in the center comes out clean.
  5. Cool slightly before slicing and serving. Enjoy warm!
