Easy mexican rice

A flavorful, fluffy side dish made with tomato, spices, and rice, perfect for everyday meals or festive spreads!


📝 Ingredients

  • 2 tbsp vegetable or canola oil
  • 1 cup uncooked long-grain white rice, rinsed
  • 1½ cups chicken stock or broth (use one made with simple ingredients)
  • 1 can (8 oz) tomato sauce
  • 1 tsp chili powder
  • 1 tsp garlic salt
  • ½ tsp ground cumin

🔪 Instructions

  1. In a saucepan or deep skillet, heat oil over medium heat.
  2. Add the rinsed rice and cook for 2–3 minutes, stirring constantly, until the rice starts to turn slightly translucent.
  3. Pour in the chicken broth, tomato sauce, chili powder, garlic salt, and cumin. Stir everything to combine.
  4. Cover with a lid, reduce the heat to low, and simmer for 20 minutes.
  5. After 20 minutes, check the texture. If the rice is still firm, add ½ cup broth and cook for 5 more minutes.
  6. Turn off the heat and let the rice rest (covered) for a few minutes before fluffing with a fork.
  7. Serve in a deep dish and garnish with fresh chopped herbs (like cilantro or parsley).
