Citrus Shrimp Quinoa Salad

Ingredients:

For the Salad:
  • 1 cup quinoa, rinsed
  • 1 pound large shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
For the Dressing:
  • 1/4 cup olive oil
  • 3 tablespoons fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

  1. Cook the Quinoa:
    • Rinse the quinoa under cold water. In a medium saucepan, combine 2 cups of water and the rinsed quinoa. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed. Fluff with a fork and let it cool.
  2. Prepare the Shrimp:
    • In a large skillet over medium-high heat, add a bit of olive oil. Season the shrimp with salt and pepper, then cook for 2-3 minutes per side or until they are pink and opaque. Remove from heat and set aside.
  3. Make the Dressing:
    • In a small bowl, whisk together the olive oil, fresh orange juice, fresh lemon juice, honey, salt, and pepper. Adjust the seasoning to taste.
  4. Assemble the Salad:
    • In a large salad bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, avocado, and chopped cilantro.
  5. Add the Shrimp:
    • Gently fold in the cooked shrimp into the salad.
  6. Drizzle with Dressing:
    • Pour the citrus dressing over the salad and toss everything together until well combined.
  7. Serve:
    • Divide the Citrus Shrimp Quinoa Salad among plates. You can garnish with additional cilantro and a wedge of lemon or orange for extra freshness.

Notes

  • Allow quinoa to cool completely before adding to the salad to prevent it from becoming mushy.
  • Be careful not to overcook the shrimp to maintain a tender texture.
  • If making ahead, store the salad and dressing separately and combine just before serving to maintain freshness.
