Chicken Zucchini Casserole with Stuffing

Here’s a delicious, cozy recipe for Chicken Zucchini Casserole with Stuffing — creamy, cheesy, and perfect for a family dinner!


Chicken Zucchini Casserole with Stuffing

Prep Time: 15 minutes
Cook Time: 40–45 minutes
Total Time: 1 hour
Servings: 6–8


Ingredients:

  • 3 cups cooked chicken, shredded or diced
  • 3 cups zucchini, diced (about 2–3 medium zucchinis)
  • 1 (6 oz) box stuffing mix (like Stove Top)
  • 1 (10.5 oz) can cream of chicken soup
  • ½ cup sour cream
  • 1 small onion, finely diced
  • 1 cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 tablespoons butter, melted
  • ½ cup chicken broth (optional, for extra moisture)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish.
  2. Prepare Stuffing:
    • In a medium bowl, mix the stuffing with the melted butter.
    • (If you like softer stuffing, add ½ cup chicken broth too.)
  3. Mix Casserole:
    • In a large bowl, stir together the chicken, zucchini, onion, sour cream, cream of chicken soup, garlic powder, salt, pepper, and cheddar cheese.
  4. Assemble:
    • Spread half of the buttery stuffing mixture into the bottom of the baking dish.
    • Spoon the chicken and zucchini mixture over the stuffing layer.
    • Top evenly with the remaining stuffing.
  5. Bake:
    • Bake uncovered for 40–45 minutes, until bubbly and golden on top.
  6. Serve:
    • Let it cool slightly, then dig in!
    • Garnish with fresh parsley if desired.

Tips:

  • Precook the zucchini a little if you prefer a softer texture (sauté for 2–3 minutes).
  • Add mushrooms or bell peppers for extra veggies.
  • Make it ahead: Assemble and refrigerate (uncooked) up to 24 hours before baking.
