CHICKEN AND SPINACH IN CREAMY MUSHROOM SAUCE

Here’s a savory, comforting recipe for Chicken and Spinach in Creamy Mushroom Sauce — a one-pan dish that’s bursting with flavor and comes together in just 30 minutes. Perfect for busy weeknights or a cozy dinner!


🍗 Chicken and Spinach in Creamy Mushroom Sauce

Prep Time: 10 minutes
Cook Time: 20–25 minutes

📝 Ingredients:

  • 4 boneless, skinless chicken breasts or thighs
  • Salt & pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 oz mushrooms, sliced (white or cremini)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream (or half & half)
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 teaspoon Italian seasoning (optional)
  • Optional garnish: chopped parsley or red pepper flakes

👩‍🍳 Instructions:

  1. Season chicken with salt and pepper on both sides.
  2. In a large skillet over medium heat, heat olive oil and butter. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same pan, add mushrooms and sauté 4–5 minutes until golden. Add garlic and cook 1 more minute.
  4. Pour in chicken broth, scraping up any bits from the pan. Let simmer 2–3 minutes.
  5. Stir in cream, Parmesan, and Italian seasoning. Let simmer 3–4 minutes until thickened slightly.
  6. Add spinach and cook until wilted. Return chicken to pan and coat with sauce. Simmer 2–3 minutes more.
  7. Serve hot, garnished with parsley or chili flakes if desired.

✅ Tips:

  • Add a splash of white wine to deglaze the pan for extra flavor.
  • Try swapping spinach with kale or Swiss chard.
  • Serve over pasta, rice, mashed potatoes, or cauliflower rice for a full meal.

🧊 Storage:

  • Store in the fridge up to 4 days.
  • Reheat gently on the stove or microwave. Sauce may thicken—add a splash of broth or cream to loosen.
