Ingredients:
- 4 slices of bread (sourdough or Italian bread works well)
- 8 slices of fresh mozzarella cheese
- 2 medium tomatoes, thinly sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
- 2 tablespoons butter
- Salt and pepper to taste
Instructions:
- Start by assembling your sandwiches. Take two slices of bread and layer two slices of mozzarella cheese on each slice.
- Add a layer of thinly sliced tomatoes on top of the cheese.
- Place fresh basil leaves on top of the tomatoes.
- Drizzle balsamic glaze over the basil leaves. If you don’t have balsamic glaze, you can make a reduction by heating balsamic vinegar in a small saucepan over medium heat until it thickens.
- Season with salt and pepper to taste.
- Place the remaining two slices of bread on top to form sandwiches.
- Heat a skillet or griddle over medium heat and melt 1 tablespoon of butter.
- Once the butter is melted and the skillet is hot, place the sandwiches in the skillet.
- Cook for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
- If needed, add the remaining tablespoon of butter to the skillet before flipping the sandwiches to ensure the bread gets nicely toasted on both sides.
- Once the sandwiches are cooked, remove them from the skillet and let them cool for a minute or two before serving.
- Cut the sandwiches in half diagonally and serve hot.
