Caprese Grilled Cheese Sandwich

Ingredients:

  • 4 slices of bread (sourdough or Italian bread works well)
  • 8 slices of fresh mozzarella cheese
  • 2 medium tomatoes, thinly sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Start by assembling your sandwiches. Take two slices of bread and layer two slices of mozzarella cheese on each slice.
  2. Add a layer of thinly sliced tomatoes on top of the cheese.
  3. Place fresh basil leaves on top of the tomatoes.
  4. Drizzle balsamic glaze over the basil leaves. If you don’t have balsamic glaze, you can make a reduction by heating balsamic vinegar in a small saucepan over medium heat until it thickens.
  5. Season with salt and pepper to taste.
  6. Place the remaining two slices of bread on top to form sandwiches.
  7. Heat a skillet or griddle over medium heat and melt 1 tablespoon of butter.
  8. Once the butter is melted and the skillet is hot, place the sandwiches in the skillet.
  9. Cook for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
  10. If needed, add the remaining tablespoon of butter to the skillet before flipping the sandwiches to ensure the bread gets nicely toasted on both sides.
  11. Once the sandwiches are cooked, remove them from the skillet and let them cool for a minute or two before serving.
  12. Cut the sandwiches in half diagonally and serve hot.

Notes

  • You can customize this sandwich according to your preferences. For example, you can add a drizzle of olive oil or a sprinkle of garlic powder for extra flavor.
