BBQ Chicken Grilled Cheese

Why This Recipe Works

This BBQ Chicken Grilled Cheese combines the best of both worlds: tender, tangy BBQ chicken and gooey, melted cheese between crispy, golden-brown bread. It’s quick to make, perfect for lunch or a weeknight dinner, and the mix of sweet BBQ sauce, savory chicken, and melted cheese makes every bite irresistible!

Ingredients

  • 1 cup cooked, shredded chicken (rotisserie or leftover chicken works well)
  • 1/4 cup BBQ sauce (plus more if desired)
  • 4 slices of bread (sourdough or your favorite sandwich bread)
  • 2 tbsp butter, softened
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • Optional: 2 tbsp thinly sliced red onion, 1 tbsp chopped fresh cilantro

Directions

  1. Prepare the BBQ Chicken:
    • In a bowl, mix the shredded chicken with BBQ sauce until evenly coated. Add more sauce if you prefer a saucier filling.
  2. Assemble the Sandwich:
    • Butter one side of each slice of bread.
    • Place two slices, butter-side down, on a clean surface.
    • Sprinkle half of the cheese on the unbuttered side of each slice.
    • Spoon the BBQ chicken mixture over the cheese. If desired, add red onion slices and cilantro.
    • Sprinkle the remaining cheese over the chicken, then top with the other slices of bread, butter-side up.
  3. Grill the Sandwiches:
    • Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  4. Serve:
    • Remove from the skillet, slice in half, and serve warm.

Note

  • Bread Choice: Sourdough or a crusty bread works great for a crispy exterior.
  • Cheese Options: Cheddar, Monterey Jack, or Gouda all melt beautifully and complement the BBQ flavor.
