This BBQ Chicken Grilled Cheese combines the best of both worlds: tender, tangy BBQ chicken and gooey, melted cheese between crispy, golden-brown bread. It’s quick to make, perfect for lunch or a weeknight dinner, and the mix of sweet BBQ sauce, savory chicken, and melted cheese makes every bite irresistible!
Ingredients
- 1 cup cooked, shredded chicken (rotisserie or leftover chicken works well)
- 1/4 cup BBQ sauce (plus more if desired)
- 4 slices of bread (sourdough or your favorite sandwich bread)
- 2 tbsp butter, softened
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- Optional: 2 tbsp thinly sliced red onion, 1 tbsp chopped fresh cilantro
Directions
- Prepare the BBQ Chicken:
- In a bowl, mix the shredded chicken with BBQ sauce until evenly coated. Add more sauce if you prefer a saucier filling.
- Assemble the Sandwich:
- Butter one side of each slice of bread.
- Place two slices, butter-side down, on a clean surface.
- Sprinkle half of the cheese on the unbuttered side of each slice.
- Spoon the BBQ chicken mixture over the cheese. If desired, add red onion slices and cilantro.
- Sprinkle the remaining cheese over the chicken, then top with the other slices of bread, butter-side up.
- Grill the Sandwiches:
- Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Serve:
- Remove from the skillet, slice in half, and serve warm.
