Baked Avocado Eggs

Ingredients:

  • 2 avocados, halved and pitted
  • 4 eggs
  • Salt and pepper to taste
  • Optional toppings: chopped fresh herbs (such as chives or parsley), shredded cheese, hot sauce

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 375°F (190°C).
  1. Prepare the Avocados:
  • Cut the avocados in half and carefully remove the pits.
  • Use a spoon to scoop out a small amount of flesh from the center to make room for the eggs.
  1. Place Avocados in Baking Dish:
  • If the avocados are not stable on their own, you can slice a small portion off the bottom to create a flat base. Place the avocados in a baking dish.
  1. Crack Eggs into Avocado Halves:
  • Carefully crack one egg into each avocado half, ensuring the yolk stays intact.
  1. Season:
  • Sprinkle salt and pepper over the eggs to taste.
  1. Bake:
  • Place the baking dish in the preheated oven and bake for about 12-15 minutes, or until the eggs are cooked to your liking. Keep an eye on them to avoid overcooking the eggs.
  1. Add Toppings (Optional):
  • Once the eggs are cooked, you can add optional toppings such as shredded cheese. Place the baking dish back in the oven for an additional 1-2 minutes, just until the cheese is melted.
  1. Serve:
  • Remove from the oven and let them cool for a minute. Sprinkle with chopped fresh herbs, hot sauce, or any other toppings you prefer.
  1. Enjoy:
  • Serve the baked avocado eggs immediately while they are warm.

Feel free to get creative with additional toppings like diced tomatoes, salsa, or a dollop of sour cream. This recipe is versatile and can be adjusted to suit your taste preferences.
