Avocado Black Bean Salad

Ingredients:

  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 ripe avocados, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare Ingredients: Start by gathering and preparing all the ingredients.
  2. Combine Black Beans and Avocados: In a large bowl, combine the drained and rinsed black beans with the diced avocados.
  3. Add Corn: Mix in the corn kernels (fresh or frozen) to the black bean and avocado mixture.
  4. Incorporate Vegetables: Add the finely chopped red onion and halved cherry tomatoes to the bowl.
  5. Add Cilantro: Sprinkle the chopped cilantro over the other ingredients in the bowl.
  6. Make Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
