Asian Noodle Salad

Ingredients for Asian Noodle Salad:

  • 8 oz (about 225g) Asian noodles (such as soba or rice noodles)
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 1/2 cup chopped scallions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1/4 cup chopped peanuts (optional)

For the Dressing:

  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame seeds (optional)

Instructions:

  1. Cook the Asian noodles according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the cooked noodles, shredded cabbage, shredded carrots, sliced red bell pepper, julienned cucumber, chopped scallions, cilantro, mint, and peanuts (if using).
  3. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey or maple syrup, grated ginger, minced garlic, and sesame seeds (if using).
  4. Pour the dressing over the noodle and vegetable mixture. Toss everything together until well coated.
  5. Serve immediately or refrigerate for a few hours to allow the flavors to meld.

Pairs well with grilled chicken, shrimp, or tofu. Enjoy your delicious and refreshing Asian Noodle Salad!

Directions

  • Cook noodles, drain, and set aside.
  • In a large bowl, combine noodles, cabbage, carrots, bell pepper, cucumber, scallions, cilantro, mint, and peanuts.
  • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey or maple syrup, ginger, garlic, and sesame seeds.
  • Pour dressing over the noodle mixture and toss to coat.
  • Serve immediately or refrigerate for a few hours.

Notes

  • Feel free to customize this Asian Noodle Salad to suit your taste. You can add protein options like grilled chicken, shrimp, or tofu for a heartier meal.
