Here’s a simple and wholesome recipe for Almond Butter Cookies — soft, chewy, and full of nutty flavor. These naturally gluten-free treats are perfect for snacking, gifting, or satisfying your sweet tooth with fewer ingredients!


🍪 Almond Butter Cookies

📝 Ingredients:

  • 1 cup almond butter (creamy, unsweetened or sweetened)
  • ¾ cup brown sugar (or coconut sugar for a refined sugar-free option)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • Optional: ¼ teaspoon salt (if almond butter is unsalted)
  • Optional mix-ins: chocolate chips, chopped almonds, or flaky sea salt on top

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix together almond butter, sugar, egg, vanilla, and baking soda until well combined.
  3. Scoop dough (about 1 tablespoon each) onto the prepared baking sheet. Flatten slightly with a fork for a crisscross pattern, or leave rounded for puffier cookies.
  4. Bake for 10–12 minutes, or until edges are golden and centers are set.
  5. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
