Here’s your go-to recipe for tall, fluffy, buttery biscuits that never fail: Mile High Perfect Biscuits 🧈🥐 Whether you serve them for breakfast, brunch, or with dinner, these golden beauties are sure to impress.

Tender, flaky, and sky-high — the ultimate biscuit recipe for any occasion!


⏱️ Time:

  • Prep Time: 10 minutes
  • Bake Time: 12–15 minutes
  • Total Time: ~25 minutes

✅ Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 tbsp cold unsalted butter, cubed
  • 3/4 cup cold buttermilk (plus extra for brushing)
  • Optional: 1 tsp sugar for a hint of sweetness

👩‍🍳 Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients:
    In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar (if using).
  3. Cut in butter:
    Using a pastry cutter or your fingers, cut cold butter into the flour mixture until it resembles coarse crumbs.
  4. Add buttermilk:
    Gently stir in buttermilk until dough just comes together. Don’t overmix.
  5. Fold for layers:
    Turn dough out onto a floured surface. Pat into a rectangle and fold into thirds (like a letter). Repeat 2–3 times, gently patting each time.
  6. Cut biscuits:
    Roll or pat dough to 1-inch thickness. Use a biscuit cutter (don’t twist!) and place biscuits close together on the baking sheet.
  7. Bake for 12–15 minutes, or until golden brown. Brush tops with melted butter if desired.

🍽️ Serving Size:

  • Makes about 8–10 biscuits

📝 Tips & Notes:

  • Cold ingredients = tall biscuits! Keep butter and buttermilk cold.
  • Folding the dough creates flaky layers — don’t skip it.
  • No buttermilk? Use 3/4 cup milk + 1 tbsp lemon juice or vinegar.
  • Bake biscuits close together for taller sides.
