Here’s a wholesome and delicious breakfast option that’s both cozy and nourishing: Bran Muffins with Applesauce! 🍎 These muffins are moist, lightly sweet, and perfect for grab-and-go mornings or a healthier snack.


🧁 Bran Muffins with Applesauce

📝 Ingredients:

  • 1 cup wheat bran
  • 1 cup applesauce (unsweetened)
  • 1 large egg
  • ½ cup brown sugar (lightly packed)
  • ¼ cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • ½ cup milk (or almond milk)
  • 1 cup all-purpose flour (or half whole wheat)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Optional: ½ cup raisins, chopped nuts, or dried cranberries

🔥 Directions:

  1. Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
  2. In a large bowl, mix bran and applesauce. Let sit for 5 minutes to soften.
  3. Add wet ingredients: Stir in egg, brown sugar, oil, vanilla, and milk.
  4. In a separate bowl, whisk dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.
  5. Combine: Add dry ingredients to the wet mix and stir until just combined. Fold in optional add-ins if using.
  6. Fill muffin cups about ¾ full. Bake for 15–18 minutes, or until a toothpick comes out clean.
  7. Cool in pan for 5 minutes, then transfer to a rack.
