Here’s a crowd-pleasing and ultra-comforting Doritos Chicken Casserole recipe—perfect for busy weeknights or potlucks!

🧀 Doritos Chicken Casserole

Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes
Servings: 6–8

📝 Ingredients:

  • 3 cups shredded cooked chicken (rotisserie works great!)
  • 1 (10.5 oz) can cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 (10 oz) can Rotel (diced tomatoes with green chiles), drained
  • 1½ cups shredded cheddar cheese (divided)
  • 1 teaspoon taco seasoning
  • 1 (9.75 oz) bag Nacho Cheese Doritos, crushed slightly

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Mix the filling:
In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, milk, Rotel, 1 cup cheddar cheese, and taco seasoning.
  3. Layer the casserole:
    • Spread half of the crushed Doritos on the bottom of the prepared baking dish.
    • Pour the chicken mixture over the Doritos.
    • Top with remaining Doritos and sprinkle the remaining ½ cup of cheese on top.
  4. Bake for 25–30 minutes or until bubbly and cheese is melted.
  5. Cool slightly and serve!

✅ Tips:

  • For a kick: add jalapeños or use spicy Doritos.
  • Want veggies? Stir in some black beans or corn.
  • Make it ahead: Assemble and refrigerate (without top layer of Doritos) for up to 1 day. Add chips and bake when ready.

Doritos Chicken Casserole is rich, creamy, and cheesy—so it pairs well with lighter, refreshing, or crunchy sides to balance it out. Here are some great options to serve with it:

🥗 Fresh & Crunchy Sides:

  • Simple Green Salad with a light vinaigrette
  • Cucumber Tomato Salad
  • Corn Salad with lime and cilantro
  • Coleslaw (vinegar-based for tangy contrast)

🥦 Vegetable Sides:

  • Steamed or roasted broccoli
  • Grilled zucchini or squash
  • Roasted Brussels sprouts with a sprinkle of parmesan
  • Sautéed green beans with garlic

🍚 Mild Carby Sides (if you want more substance):

  • Cilantro lime rice
  • Mexican-style corn (Elote)
  • Refried beans or black beans
  • Roasted sweet potatoes

🍹 Drinks or Extras:

  • A light sparkling water with lime
  • Avocado slices or guacamole on the side
  • Salsa or pico de gallo with a few extra chips
