🧀 Cheesy Chicken Casserole

This Cheesy Chicken Casserole is a creamy, comforting dish loaded with tender chicken, pasta, and melty cheese — a perfect weeknight meal the whole family will love!


🧀 Cheesy Chicken Casserole

Prep Time: 15 minutes
Cook Time: 25–30 minutes
Total Time: ~45 minutes
Servings: 6–8


📝 Ingredients:

  • 3 cups cooked chicken, shredded or chopped
  • 2 cups uncooked pasta (penne, rotini, or elbow macaroni)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • ½ cup milk
  • 2 cups shredded cheddar cheese, divided
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt & black pepper, to taste
  • Optional: ½ cup frozen peas or broccoli florets
  • Optional topping: ½ cup crushed Ritz crackers or buttered breadcrumbs

👩‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook pasta until al dente. Drain and set aside.
  3. In a large bowl, mix together cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  4. Stir in cooked chicken, cooked pasta, 1½ cups of cheese, and veggies if using.
  5. Pour mixture into the prepared baking dish. Sprinkle the top with remaining cheddar cheese and crushed crackers or breadcrumbs (if using).
  6. Bake uncovered for 25–30 minutes, or until bubbly and golden on top.

✅ Tips:

  • Use rotisserie chicken for a quick prep.
  • Try adding sautéed mushrooms, spinach, or cooked bacon for variety.
  • Substitute Greek yogurt for sour cream for a lighter version.

🧊 Storage:

  • Refrigerate leftovers for up to 4 days.
  • Freeze before or after baking for up to 2 months. Thaw and reheat in oven.
