- 2 sheets puff pastry (thawed)
- 1 cup ricotta cheese
- 1 cup fresh spinach (chopped & lightly sautΓ©ed)
- ΒΌ cup grated Parmesan
- 1 egg (for the filling)
- 1 egg yolk + 1 tbsp milk (for egg wash)
- Β½ tsp garlic powder
- Β½ tsp salt
- Β½ tsp black pepper
- Β½ tsp red pepper flakes (optional, for spice)
- Sesame seeds or poppy seeds (for garnish, optional)

Oven Method:
1οΈβ£ Preheat oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
2οΈβ£ Make the filling:
- In a bowl, mix ricotta, spinach, Parmesan, egg, garlic powder, salt, and pepper until well combined.
3οΈβ£ Assemble the rolls:
- Roll out puff pastry sheets and cut them into two long strips each.
- Spread the spinach-ricotta filling along one edge of each strip.
- Roll tightly into a log shape and cut into 4-6 smaller rolls per strip.
4οΈβ£ Brush & bake:
- Place rolls on the baking sheet, seam-side down.
- Brush with egg wash and sprinkle with sesame seeds.
- Bake for 20-25 minutes, until golden brown & crispy.
Air Fryer Method:
1οΈβ£ Preheat air fryer to 350Β°F (175Β°C).
2οΈβ£ Follow steps 2-3 above to prepare the rolls.
3οΈβ£ Air fry in batches:
- Place rolls in the air fryer basket, leaving space between them.
- Air fry for 10-12 minutes, or until golden and crisp.
