Here’s a super easy and flavorful Crockpot Beef and Broccoli recipe — tender beef strips slow-cooked in a savory garlic-ginger sauce with broccoli added at the end for that perfect texture. A takeout favorite made healthier at home!

🥢 Crockpot Beef and Broccoli

Prep Time: 10 minutes
Cook Time: 4–5 hours (on low)
Total Time: ~5 hours
Servings: 4–6

📝 Ingredients:

  • 1½ lbs flank steak or sirloin, thinly sliced
  • 1 cup beef broth
  • ½ cup low-sodium soy sauce
  • ⅓ cup brown sugar
  • 1 tablespoon sesame oil (optional)
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger (or 1 tsp ground ginger)
  • ¼ cup cornstarch + ¼ cup water (for slurry)
  • 3 cups broccoli florets (fresh or frozen)
  • Optional garnish: sesame seeds, green onions

👩‍🍳 Instructions:

  1. Prepare the beef:
Slice beef thinly across the grain. Add to crockpot.
  2. Make the sauce:
In a bowl, whisk together broth, soy sauce, brown sugar, sesame oil, garlic, and ginger. Pour over the beef.
  3. Slow cook:
Cover and cook on LOW for 4–5 hours, or until beef is tender.
  4. Thicken the sauce:
Mix cornstarch and water to make a slurry. Stir into the crockpot and cook on HIGH for 30 minutes, until thickened.
  5. Add broccoli:
In the last 30 minutes, add broccoli to the crockpot. For firmer broccoli, steam separately and stir in just before serving.
  6. Serve hot over rice, noodles, or cauliflower rice.

✅ Tips:

  • Freeze raw beef in the sauce ahead of time — thaw and drop into crockpot for a meal prep win!
  • For extra flavor, add a splash of rice vinegar or hoisin sauce.
  • Don’t overcook broccoli in the slow cooker — it softens fast!
