๐Ÿฅž Vegan Banana Oat Pancakes

Fluffy, hearty, and naturally sweetened, these Vegan Banana Oat Pancakes are made with wholesome ingredients and are perfect for a cozy, plant-based breakfast. No eggs, no dairy โ€” just simple goodness!

๐Ÿ“ Ingredients:

  • 1 ripe banana, mashed
  • 1 cup rolled oats
  • 3/4 cup unsweetened almond milk (or other plant milk)
  • 1 tablespoon maple syrup (optional, for added sweetness)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Optional add-ins: mini dairy-free chocolate chips, chopped nuts, or blueberries

  1. Blend all ingredients in a blender until smooth. Let batter rest for 5 minutes to thicken slightly.
  2. Heat a non-stick skillet over medium heat and lightly grease with oil or spray.
  3. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form and edges look set (about 2โ€“3 minutes), then flip and cook for another 1โ€“2 minutes.
  4. Serve warm with your favorite toppings: maple syrup, fresh fruit, nut butter, or a sprinkle of cinnamon.

  • Make sure your banana is very ripe for maximum flavor and natural sweetness.
