Here’s a hearty and easy Sausage Green Bean Potato Casserole — a one-dish wonder that’s packed with smoky sausage, tender potatoes, and seasoned green beans. Perfect for cozy family dinners or meal prepping!


🥔 Sausage Green Bean Potato Casserole

Cook Time: 45–50 minutes

📝 Ingredients:

  • 1 lb smoked sausage or kielbasa, sliced
  • 1½ lbs baby potatoes, halved or quartered
  • 1 lb green beans, trimmed (fresh or frozen and thawed)
  • 1 medium onion, chopped
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt & black pepper, to taste
  • Optional: 1 tablespoon ranch seasoning or Italian herbs for extra flavor
  • Optional garnish: chopped parsley or grated Parmesan

👩‍🍳 Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine sliced sausage, potatoes, green beans, and onions.
  3. Drizzle with olive oil, then sprinkle with garlic powder, paprika, salt, pepper, and any optional seasonings. Toss to coat evenly.
  4. Pour mixture into the prepared baking dish. Cover tightly with foil.
  5. Bake for 35 minutes covered, then remove foil and bake another 10–15 minutes until potatoes are fork-tender and sausage is browned.
  6. Garnish and serve warm!
