📝 Ingredients:

  • 1 lb smoked sausage, sliced into coins (kielbasa, beef, turkey, or andouille)
  • 1½ lbs baby potatoes (or Yukon golds/red potatoes), quartered
  • 1 red or yellow bell pepper, sliced (optional but colorful!)
  • 1 small red onion, chopped (optional)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • Optional: chopped fresh parsley for garnish

🔥 Directions:

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment or foil.
  2. In a large bowl, toss potatoes, sausage, peppers, and onion with olive oil and seasonings.
  3. Spread everything out evenly on the baking sheet — don’t overcrowd for max crispiness!
  4. Roast for 35–40 minutes, flipping halfway, until potatoes are golden and tender, and sausage is browned and sizzling.
  5. Garnish with parsley and serve hot!

  • Want extra crisp? Broil for 2–3 minutes at the end.
  • Add zucchini, mushrooms, or green beans for more veggie power.
