- Prep the jar: Sterilize a large glass jar or several mason jars (wide-mouth jars work great).
- Slice the sausage into desired sizes and pack into the jars tightly.
- Make the brine: In a saucepan, combine vinegar, water, sugar, pickling spice, red pepper, garlic, and onion. Bring to a gentle boil.
- Pour the brine over the sausages until completely submerged.
- Seal and cool to room temperature, then refrigerate.
- Marinate for at least 3 days, preferably a full 7 days for the best flavor.
