🀠 Easy Cowboy Casserole

Easy Cowboy Casserole is a hearty, family-friendly dish packed with seasoned ground beef, creamy sauce, corn, cheese, and topped with crispy tater tots. It’s comfort food at its best — simple, satisfying, and perfect for busy weeknights!


🤠 Easy Cowboy Casserole

Total Time: ~55 minutes

📝 Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 can (15 oz) whole kernel corn, drained
  • 1½ cups shredded cheddar cheese, divided
  • Salt & pepper, to taste
  • 1 bag (32 oz) frozen tater tots
  • Optional: chopped parsley or green onions for garnish

👩‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and onion until beef is browned. Add garlic, and cook 1 minute more. Drain excess fat.
  3. Stir in cream of mushroom soup, sour cream, corn, and 1 cup cheese. Season with salt and pepper.
  4. Transfer the beef mixture to the baking dish and spread evenly. Top with a layer of frozen tater tots.
  5. Bake uncovered for 35–40 minutes, until the tater tots are golden and crispy.
  6. Sprinkle with remaining ½ cup cheese and bake an additional 5 minutes, until melted.
  7. Garnish with parsley or green onions if desired. Serve hot!

✅ Tips:

  • Add jalapeños or Rotel tomatoes for a spicy kick.
  • Sub ground turkey or chicken for a lighter version.
  • Make ahead and refrigerate overnight — just add 10 extra minutes to bake time.
