  • 1½ to 2 lbs boneless, skinless chicken breasts or thighs
  • 1 box (6 oz) stuffing mix (like Stove Top)
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup chicken broth
  • 1 tsp poultry seasoning (optional)
  • Salt & pepper, to taste
  • Optional: 1–2 cups frozen mixed veggies or sautéed mushrooms/onions for added nutrition

  1. Spray your slow cooker with nonstick spray.
  2. Layer the chicken at the bottom. Season lightly with salt, pepper, and poultry seasoning (if using).
