🍽️ Easy Chicken Parmesan Casserole (Inspired by Cleo Coyle)

This Easy Chicken Parmesan Casserole is a cozy, oven-baked twist on the Italian classic — featuring tender chicken, savory marinara, crispy breadcrumbs, and melty mozzarella. A no-fuss weeknight favorite the whole family will love!

⏳ Cook Time: 30–35 minutes

📝 Ingredients:

  • 3 cups cooked chicken, shredded or cubed
  • 2 cups marinara sauce
  • 1½ cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1½ cups garlic croutons or toasted breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Optional: fresh basil or parsley for garnish

👩‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
  2. Layer the casserole:
    • Spread chicken in the bottom of the dish.
    • Pour marinara sauce evenly over the chicken.
    • Sprinkle with mozzarella and Parmesan.
  3. In a bowl, toss croutons (or breadcrumbs) with olive oil and Italian seasoning. Spread over the top of the casserole.
  4. Bake uncovered for 30–35 minutes, until bubbling and golden brown on top.
  5. Let rest 5 minutes. Garnish with chopped basil or parsley if desired. Serve with pasta, salad, or steamed veggies.

  • Use rotisserie chicken to save time.
  • Swap croutons for panko breadcrumbs for a lighter crunch.
  • Spice it up with a pinch of red pepper flakes in the sauce.

  • Refrigerate for up to 3 days.
  • Freeze leftovers up to 2 months. Reheat covered in the oven at 350°F.
