Here’s a Chicken, Spinach & Mushroom Low Carb Oven Dish that’s creamy, comforting, and keto-friendly! 🍗🍄🥬 Perfect for a weeknight dinner that won’t derail your low-carb goals — and it comes together all in one dish!


🍽️ Chicken, Spinach & Mushroom Low Carb Oven Dish

📝 Ingredients:

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 8 oz mushrooms, sliced (button or cremini)
  • 3 cups fresh spinach (or 1 cup frozen, thawed and squeezed dry)
  • 3 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup cream cheese (softened)
  • ½ cup shredded mozzarella or Parmesan
  • Salt & pepper, to taste
  • Optional: pinch of red pepper flakes or Italian seasoning

🔥 Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, sauté mushrooms in olive oil over medium heat until browned and tender (about 5–7 minutes). Add garlic and cook another minute.
  3. Add spinach and cook until wilted (if using fresh). Remove from heat.
  4. In a bowl, mix cream cheese, heavy cream, and half the mozzarella or Parmesan. Stir in the sautéed mushroom-spinach mix. Season with salt, pepper, and red pepper flakes if using.
  5. Place chicken breasts in a greased baking dish. Season with salt & pepper. Spoon the creamy spinach mushroom mixture evenly over the chicken.
  6. Sprinkle remaining cheese on top. Bake uncovered for 25–30 minutes, or until the chicken is cooked through (internal temp 165°F/74°C).
  7. Broil for 2–3 minutes at the end if you want the cheese golden and bubbly!

  • Slice chicken breasts in half lengthwise to cook faster.
  • Add cooked bacon crumbles on top for a smoky boost.
  • Sub in zucchini, broccoli, or kale if you want a veggie change-up.
