Here’s a cozy and crowd-pleasing Easy Brunch Casserole that’s perfect for holidays, weekend mornings, or anytime you want a hearty breakfast with minimal effort.


🍳 Easy Brunch Casserole

Cook Time: 45–50 minutes
Total Time: 1 hour
Servings: 6–8


📝 Ingredients:

  • 1 lb breakfast sausage (or bacon/ham), cooked and crumbled
  • 6 large eggs
  • 2 cups milk (whole or 2%)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)
  • 3 cups frozen hash browns, thawed
  • 1½ cups shredded cheddar cheese
  • ½ cup chopped onion (optional)
  • ¼ cup chopped green bell pepper (optional)

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook sausage in a skillet over medium heat until browned. Drain excess fat.
  3. Layer the casserole:
    • Spread thawed hash browns in the bottom of the dish.
    • Top with cooked sausage, onion, and bell pepper (if using).
    • Sprinkle shredded cheese evenly on top.
  4. Whisk eggs & milk:
    In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder. Pour over the casserole.
  5. Bake:
    Bake uncovered for 45–50 minutes, or until the center is set and the top is golden.
  6. Cool & serve:
    Let rest for 5–10 minutes before slicing and serving.

  • Assemble the night before, cover, and refrigerate — just bake in the morning!
  • Mix up cheeses (cheddar, pepper jack, mozzarella) for different flavor profiles.
