🍳 Cheesy Amish Breakfast Casserole

This Cheesy Amish Breakfast Casserole is loaded with hash browns, eggs, sausage, and three types of cheese — a rich and satisfying dish perfect for brunch, holidays, or make-ahead mornings!


🍳 Cheesy Amish Breakfast Casserole

Prep Time: 15 minutes
Cook Time: 40–45 minutes
Total Time: ~1 hour
Servings: 8


📝 Ingredients:

  • 1 lb breakfast sausage (or bacon/ham), cooked and crumbled
  • 6 large eggs
  • 2 cups cottage cheese
  • 2 cups shredded cheddar cheese
  • 1½ cups shredded Swiss cheese (or mozzarella)
  • 1 bag (20 oz) frozen shredded hash browns, thawed
  • ½ cup chopped onion
  • Salt & pepper to taste
  • Optional: chopped green onions or parsley for garnish

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together eggs, cottage cheese, cheddar, and Swiss cheese.
  3. Stir in hash browns, onion, and cooked sausage. Season with salt and pepper.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 40–45 minutes, or until golden and set in the center.
  6. Let cool for 5–10 minutes before slicing. Garnish and serve!

✅ Tips:

  • Use low-fat cottage cheese if preferred.
  • Make ahead and refrigerate overnight — just bake in the morning!
  • Can be frozen after baking — cool completely, wrap well, and freeze up to 2 months.
