📝 Ingredients:
- 1 lb breakfast sausage (or bacon/ham), cooked and crumbled
- 6 large eggs
- 2 cups cottage cheese
- 2 cups shredded cheddar cheese
- 1½ cups shredded Swiss cheese (or mozzarella)
- 1 bag (20 oz) frozen shredded hash browns, thawed
- ½ cup chopped onion
- Salt & pepper to taste
- Optional: chopped green onions or parsley for garnish

- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, whisk together eggs, cottage cheese, cheddar, and Swiss cheese.
- Stir in hash browns, onion, and cooked sausage. Season with salt and pepper.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 40–45 minutes, or until golden and set in the center.
- Let cool for 5–10 minutes before slicing. Garnish and serve!
