- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- Salt & pepper, to taste
- 2 cups uncooked elbow macaroni (or rotini)
- 2 cups shredded cheddar cheese
- 1 cup mozzarella cheese, shredded
- Optional: chopped parsley for garnish

- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef and onion until beef is browned and onions are soft. Drain excess grease.
- Add garlic and cook for 1 more minute. Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5–10 minutes.
- Meanwhile, cook pasta according to package directions until al dente. Drain and set aside.
- Combine the cooked pasta with the meat sauce. Stir in 1 cup of cheddar cheese.
- Pour mixture into the prepared baking dish. Top with remaining cheddar and mozzarella cheese.
- Bake uncovered for 20–25 minutes, or until bubbly and cheese is melted and golden.
- Garnish with chopped parsley if desired. Serve warm.
