๐Ÿฐ Preacher Cake

๐Ÿ“ Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • ยฝ tsp salt
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 (20 oz) can crushed pineapple in juice (undrained)
  • 1 cup chopped pecans
  • 1 tsp vanilla extract

For the Frosting:

  • 8 oz cream cheese, softened
  • ยฝ cup (1 stick) butter, softened
  • 3ยฝ cups powdered sugar
  • 1 tsp vanilla extract
  • Optional: extra chopped pecans for topping

๐Ÿ”ฅ Directions:

Make the Cake:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9ร—13-inch baking dish.
  2. Mix Dry Ingredients:
    In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. Add Wet Ingredients:
    Stir in sugar, eggs, crushed pineapple with juice, vanilla, and pecans until well combined. Batter will be thick.
  4. Bake:
    Pour into prepared pan and bake for 35โ€“40 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool Completely before frosting.

Make the Frosting:

  1. Beat cream cheese and butter until creamy.
  2. Gradually mix in powdered sugar, then add vanilla.
  3. Spread frosting over cooled cake and sprinkle with extra pecans if desired.

โœ… Tips & Notes:

  • No oil or butter needed in the cake โ€” the pineapple keeps it moist!
  • You can fold in coconut or raisins if you like a fruitier texture.
  • This cake stores well in the fridge for several days.
