Flavor: Rich chocolate, nutty, lightly sweet

Texture: Chewy, dense, fudgy

📝 Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup peanut butter (or almond butter)
  • ½ cup honey or maple syrup
  • 1 cup semi-sweet chocolate chips
  • ¼ cup coconut oil or butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: chopped nuts, shredded coconut, or a sprinkle of sea salt on top

🔥 Directions

  1. Line a baking dish (8×8 or 9×9) with parchment paper.
  2. In a saucepan over medium heat, melt peanut butter, honey, and coconut oil until smooth and combined. Remove from heat.
  3. Stir in vanilla extract and a pinch of salt.
  4. Add the oats and mix well until fully coated.
  5. Press half the oat mixture into the prepared dish and flatten evenly.
  6. Melt chocolate chips (in microwave or double boiler), then pour over the oat layer and spread evenly.
  7. Press remaining oat mixture over the chocolate layer (optional for a layered look), or leave chocolate as the top.
  8. Chill for 2–3 hours or until firm. Slice into bars and enjoy!

💡 Tips & Notes

  • Want it nut-free? Use sunflower seed butter or Wowbutter.
  • Make it extra indulgent by adding a swirl of Nutella or cookie butter.
  • Store in the fridge for a firmer texture, or room temp for softer bars.

❄️ Storage

  • Keep refrigerated for up to 1 week, or freeze for 2–3 months.
  • Place parchment between layers to prevent sticking.
