🍪 Amazing White Chocolate Chip Pistachio Cookies

📝 Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ cups white chocolate chips
  • 1 cup pistachios, shelled and roughly chopped

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugars:
    In a large bowl, beat softened butter with brown and granulated sugar until light and fluffy.
  3. Add eggs and vanilla:
    Beat in eggs one at a time, then stir in vanilla extract.
  4. Mix dry ingredients:
    In a separate bowl, whisk together flour, baking soda, and salt.
  5. Combine:
    Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Add mix-ins:
    Fold in white chocolate chips and chopped pistachios.
  7. Scoop and bake:
    Drop tablespoon-sized scoops onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake:
    Bake for 12–15 minutes or until edges are golden but centers remain soft.
  9. Cool:
    Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

❄️ Can You Freeze White Chocolate Pistachio Cookies?

Absolutely! These cookies freeze very well — both before and after baking.

🔹 To Freeze Baked Cookies:

  1. Let cookies cool completely.
  2. Place in a single layer on a baking sheet and freeze for 1 hour (flash freeze).
  3. Transfer to a freezer-safe bag or container with parchment between layers.
  4. Label and freeze for up to 3 months.

➡️ To serve: Let thaw at room temperature for 15–30 minutes, or warm briefly in a 300°F oven for a fresh-baked feel.

🔹 To Freeze Cookie Dough:

  1. Scoop dough into balls and place on a parchment-lined tray.
